Individual Pan Pizzas...aka Mini Health Pies

Hi readers,
I've been making a big effort to eat more healthfully lately. For me, that means less saturated fat, less sugar, more veggies, and more whole grains. I made these little beauties for dinner tonight:







As you can see, I started with multi-grain dinner rolls. Even though the dough didn't totally rise, it still worked. I spread out the dough into six-inch pizza pies, brushed on olive oil, and spread diced garlic over the top of that. I spooned on diced tomatoes from a can. Next, I sprinkled on Italian seasoning, fresh onions, fresh basil from my apartment balcony pot, grated Parmesan cheese, and fresh mushrooms from the Dane County Farmers' Market. DELICIOUS. I don't like to overuse all caps, so I'm serious when I say these little pies are going to be part of the regular dinner rotation from now on. The best part is you can buy the multi-grain dinner rolls in bags of 24, and just pull out a couple as you need them. This is an economical, healthy, and tasty meal. Booyah.

Oh, I drank iced Pu'erh tea with my 'za. ;-)
